Chef Vidish's culinary journey is rooted in his upbringing on a farm in Western India, where he learned to cook with gratitude, seasonality, and respect for nature. After honing his craft at the iconic Taj Mahal Palace in Mumbai and working in Washington, D.C., he brought his expertise to Toronto, leading teams at Marriott and Four Seasons. A globally trained chef with experience in Dubai and Italy, Chef Vidish blends technical mastery with heartfelt hospitality—creating memorable experiences from casual meals to grand celebrations. Outside the kitchen, he enjoys gardening, travel, and family life.

Darwin brings over a decade of Food & Beverage experience shaped by his Filipino roots and passion for hospitality. A Centennial College graduate, he has worked with leading Toronto hotels including Fairmont Royal York and Chelsea Hotel. Since joining Delta Toronto in 2021, Darwin has led SOCO Kitchen + Bar and helped rebrand CHAR No.5 Whisky & Cocktail Lounge. His vision is to make the hotel's dining venues "the attraction within the attractions" of downtown Toronto.
