Growing up on a farm in Western India, Chef Vidish developed a deep gratitude for the land and a true farm-to-table mindset, letting seasonality shape his cooking from a young age. His philosophy is simple: good food leads to joy, and it begins with quality ingredients and the people who grow them. We are, because they are. Nature—and the people who farm it—make everything we do possible.
He began with a seven-year progression from trainee to CDP at the legendary Taj Mahal Palace, Mumbai—an icon of Asian luxury hospitality and culinary excellence. There, he honed skills across multiple cuisines before moving to Washington, D.C., where he cooked for members of Congress and world leaders. Since 2013, he has held leadership roles in Toronto, including Restaurant Chef with Marriott Hotels and Banquet Chef with Four Seasons Hotels & Resorts. With this versatility, Chef Vidish is dedicated to delivering the best experience—whether it's a family dinner, a wedding, or a gala event.
A graduate of the Institute of Hotel Management, Mumbai, he broadened his global perspective with stints in Dubai and Italy, earning certification with the Federazione Italiana Cuochi. Outside the kitchen, Chef Vidish values family time and enjoys gardening and traveling with his wife, daughter, and son.
